Puff pastry with simmered asparagus and FEUERGOLD

These delicious puff pastries celebrate the asparagus season with elegance.

1 sheet puff pastry
500 g green asparagus
1 onion
1 tablespoon butter
2 dl vegetable stock
200 g crème fraîche

Divide the dough lengthwise, then divide each half into four. Arrange the pieces on a baking tray lined with baking paper and prick generously with a fork. Bake in lower half of preheated oven at 220° C for approx. 10 min.
Cut asparagus into 2 cm lengths, finely chop onion. Fry together in hot butter. Add the stock and cook for approx. 7 min over low heat.
Stir in crème fraîche, season with salt and pepper. Place two pieces of pastry on top of each other, garnished with asparagus.
